Start with these two
The big one is AISI 304, the other two are AISI 201
The large SH1286-1 is AISI 304 stainless steel throughout, with 0.6 mm shelf panels, legs and support rails at 0.8 mm, and adjustable plastic feet. SH8086-1 and SH8071-1 are AISI 201 at 0.5 mm, which is most of why the price differs by nearly three times. All three are solid stainless and wash down with water.
The top shelf holds 100 kg, with two more below it
SH1286-1 is rated at 100 kg on the top shelf and 60 kg each on shelves two and three. SH8086-1 and SH8071-1 hold 60 kg on top and 40 kg on each lower shelf. SH1286-1 also has a guard rail on three sides of all three shelves, while the other two have a lip on shelves two and three only.
SH8071-1 sits 15 cm lower so cooking is comfortable
SH8071-1 is built for a stove. Its top sits at 71 cm, 15 cm below the other two, so once a stove is on it the pot rim lands at a normal working height. The top has two removable stops to hold the stove steady, plus a gas hose port and a hook to store the hose. All three belong to this model alone.
